The specific characteristic of
the two kind of extra virgin organic olive oils cold extracted pruced in
our farm
are below reported.
1) The medium fruity: extra virgin olive oil from
organic farming (cold extracted) " VOCI"
. Obtained from Moraiolo Leccino and Frantoio cultivar (variety of
olive tree). These are the more representative olives variety in Umbria
It is a medium fruity oil, the smell remember markedly fresh olives and shows erbacus
scent. The taste is characterized by a remarkable olive and grass flavor
with medium intensity of bitter and pungent.

farming (cold extracted) "LECCIO". Obtained from Leccino
cultivar (only one variety of olive). It is a monovarietal olive oil. It is also a medium fruity oil,the smell
remenber olives but prevails the rosemary and balsamic scent. The taste
open with olives and almonds flavor with medium intensity of bitter and
pungent.
